Hokkaido’s seasonal ingredients will take centre stage at Ly, a new restaurant scheduled to open in mid-December 2026 inside the Aluna Villa Niseko clubhouse.

Announced by Tokyo-based operator Eat Creator on October 13, the restaurant will combine wood-fire cooking and fermentation with French culinary foundations. Located in Niseko’s Soga district, it aims to serve both villa guests and travellers seeking a dining destination.
Hokkaido ingredients meet wood-fire cooking
Ly’s approach will draw on produce from Hokkaido’s land and surrounding seas. Flames, smoke and embers will shape the cooking, with seasonal ingredients guiding a menu that extends beyond traditional French boundaries.

The name reinforces the intended atmosphere. According to Eat Creator’s recruitment materials, “Ly” refers to shelter or protection in Norwegian and Danish; a fitting reference for a restaurant conceived as a warm retreat from northern wind and snow.
The company describes an environment where guests can relax while enjoying carefully prepared food, wine and service. Its sommelier recruitment materials also outline plans to develop a wine list and pairings around the cuisine, although specific selections have yet to be announced.
A restaurant for villa guests and visiting diners
The intimate, 34-seat restaurant will include eight counter seats, 16 table seats and a ten-seat private dining room. Guests will be able to choose from Premium, Signature and Standard courses, alongside à la carte dishes.
That flexibility should accommodate both a full evening meal and a shorter visit for food and a drink. Owners and guests staying at the villas will receive booking priority, while the operator also intends to attract visitors from outside the development.
Precise access conditions remain to be confirmed. Reservations are scheduled to begin in December; course prices and an exact opening date were not included in the announcement.
Eat Creator brings experience across several food concepts, including Pâtisserie ease and chocolate and ice-cream specialist teal in Tokyo’s Nihonbashi Kabutocho district. For Ly, the opportunity is to translate that experience into a restaurant with a distinct Hokkaido identity.
About Aluna Villa Niseko
Aluna Villa Niseko is a boutique development comprising just four luxury villas and a separate management building. Developed by SPARX Group through its subsidiary SPARX Investment, the project was designed for buyers from Japan and overseas, with SPARX’s disclosed construction schedule targeting completion in autumn-winter 2026.
SPARX subsequently announced refinements to the villas’ specifications to create more sophisticated interiors, alongside plans to install furniture and equipment before delivery. These enhancements were intended to give the properties a distinctive character within Niseko’s growing luxury accommodation market.
